Look forward to the progress of this project. I'm into used TV's myself and have had an eye out for a similar Suburban.
I would suggest to follow the KISS method for now with this project...get it reliable and running with the drive train you have now.. get the brakes fixed and then get the interior comfortable for you.
I agree with Grit Dog as you will never get out of this rig what you will put in it. Let's be real, you are doing this as a project/therapy/satisfaction purposes...when you are done you will have something you are proud of and know front to back.
You also will not have 60k plus in your truck...even if replace every component in the drivetrain you will not get close to that.
The 350 Is my Favorite Chevy motor. It's just a good reliable motor...it can race, it can tow, it can do it all.
Long term...I would save for a 350 crate motor short block and add some Edelbrock heads and cam...along with a custom tune.
I would run the stock trans. Four speeds are not near the transmissions they have today...those six speeds are fantastic...but that doesn't mean that the 4 speeds are junk. I remember them being the bees knees...
I still drive a four speed auto every day...they are not that bad. Lol
