I use my Stabilizer "jack" to lift my TT enough to level it all the time. They are indeed scissor jacks when used in any other nuance and will work fine unless you put a tremendous strain on them. I'm nt saying you can lift the wheels off the ground but lifting it a couple inches hurts nothing.
The manufacturers declaration that they aren't meant to lift is CYA stuff.
I did once overload mine. I had a flat and had to pull over into some soft ground. I couldn't get a jack under it so I used the rear stab jack to lift it high enough to get my bottle jack underneath.
The jack-screw in the jack bent a bit under this abuse. I used a rubber mallet to straighten it and it was fine.
