6 cylinder is a pretty vague term anymore.
Ram, Ford, and Chevy all make a V6 half ton truck. All of them have around 300 horsepower, which a few years was top of the line V8 power. They all are rated for over 20 mpg highway.
Ford also has the Ecoboost v6, although real world it does not often see a significant fuel benefit over a traditional V8. My V8 Ram regularly sees 18 mpg average while my brothers Ecoboost is around 13 mpg.
The Tacoma and Frontier have a v6, but they are old technology, and are not rated for much better than a half ton truck.
The new GMC Canyon and Chevy colorado will be out soon with V6 power, and should get respectable fuel economy.
If it's just you and the dog, a Ram 1500 single cab with the pentastar v6 will get 25mpg highway, and be rated to pull 7000lbs with 1500lbs of payload.... plenty of great options of TT out there in that weight range.
