First Question:
My user's manual states that: "Do not exceed a trailer weight of 5100 pounds unless the vehicle is equipped with the Heavy Duty Trailer Tow Package or the MAX Trailer Tow Package.

If you manual says 5100# then that's the max you can pull period. It might be based on the receiver that is installed on the truck. Your truck weight and GCWR seem to imply a higher max tow so that's why I suspect that the hitch receiver may be the limiting factor.

2nd Question.
I did some calculations, assuming that the tongue weight is 10% of the loaded trailer weight.
This made me realized that I can carry more cargo if I put it in the Toy Hauler than in the back of the pickup truck.
Does this make sense?

10% is a bit low the numbers I usually see around here are 15-20%. Unless you can find a very light weight toy hauler I would not plan to pull one with that truck
