My wife and I have been RVing since 1987. This is the first new unit and the first with a slide. We love the slide out. Get the slide out. It's worth it. We bought a new 2017 Coleman (Dutchman) 262BH 27 foot. It was affordable, roomy, tows great, heats well in freezing temps and cools well in direct sunlight in the heat of summer. The dry weight is just under 5800 pounds, like 5765-ish. I tow with the tanks empty and I estimate the tow weight at 6500 to be safe. The tow weight rating on my Suburban is 7200 (4x4). I added Sumosupersprings and the chassis WD hitch handles the weight very well. After not having a slide out for the best part of 30 years I can't stress how much we love it.
Our slide blocks the bathroom when it's closed. But, as a general rule we don't use it on the road anyway. We stop at rest areas and when we need gas we always find stations big enough to get in and back out of. The slide doesn't completely block access to the bathroom but, let it out six inches and we have plenty of room to get to the bathroom. I like to have everything ready for storage when we leave the last campground so, we just don't use the bathroom when on the road. Not a big deal.
My advice would be get the slideout. You will never regret it.
