Nighttime Ventilation questions for newbie..AC or Fan?

Does you bathroom vent already have a fan in the ceiling? if so you might be able to get away with just a Maxair cover, the inexpensive way to go. We use a couple of floor based oscillating style fans they are actually very quiet and get the job of moving air done quite well.
