There are mainly two reasons to run stacks.
1) For cattle hauling(as article stated) so you don't choke out the cattle with the older trucks that spewed out a lot of smoke.
2) Drag racing. Some tracks and/or associations require your smoke stack to be a certain height for diesel vehicles due to how much smoke they emit.
Outside of this they are just posers like those guys who lift their vehicles but never go off road.
