Thanks to all for your help and feedback. Keep the ideas coming.
Fortunately, I found a Lance 811 for sale that would eliminate all of these issues. Unfortunately, the wife has already seen the Caribou, and anything else I show her at this point is going to be a disappointment. What can I say - size matters to her, and she likes big - lol.
I'm going to look at the truck tomorrow,and see what the options look like for fabricating something sturdier than the existing factory hitch. After doing the math, I'm not comfortable with anything longer than a 24" hitch extension no matter what hitching equipment I use - there's just too much leverage at work.
