When I did plumbing work on my last camper to add an isolation valve at the city water inlet, it was not tightened all the way. Water under pressure will come out at a decent rate!! Quickest dash tot he spigot I ever did!
NorthStar uses those "flair-it" type connection and if you don't get them seated tight, it will leak.
My guess is that OP needs to re-check the connections.
With respect to "a stream shooting out from the cooler type insulation"... I agree with others that might be the water heater... and if water is coming from behind it, then I hope OP did not compromise the connection inside it at the heater itself when doing the work.
