I may have a different "6.7", however your owner's manual specifies that you can use 5W-40. I wouldn't worry about using 5W-40 year round. I believe the lighter weight oil viscosity that Ford specifies is more or less to help with fuel economy (talking about the 10W-30 here). This is a trend that all engine makers are moving towards for improved fuel economy. Even Cummins specifies that you can use 10W-30 in moderate temperatures for some of their engines (I recall ISB and ISL being on that list).
Personally, I like the idea of more protection from a thicker viscosity. I use Shell Rotella 5W-40. Then I don't have to think about ever changing oil just for that 1 harsh use I may have.
