Couple issues I see are, what access do you have when the slides are in? No storage in the bathroom for towels, TP, etc, and with just a booth dinette to sit on your sitting time will be limited. Never sat on a booth cushion that didn't sag to the plywood after 30 mins. If that's your only sitting area then you will want to either upgrade the foam in the cushions or remove the booth dinette and replace it with a wall hugger reclining sofa. You will lose some storage under that dinette though. I'm not sure you could full time in it. If your towing it with a truck and it has a canopy you could use the truck for some of the storage. Full timing requires a lot more supplies than just heading out for a few weeks. You need to figure out how much stuff you use at home in a month and that's what you need out traveling also.
JMHO but I would look for something a tad bigger. One with a slide with a sofa and on the other side a booth or free standing dinette. Also one with some storage in the bathroom for towels, hair dryer, TP, cleaning products, etc.

Not pushing Arctic Fox but using them as an example. You will want a solid unit with 4 season construction. There are others out there as well.
