Not sure what type of fridge you have. When we had a small pup with a three way Dometic fridge (120V/12V/propane) it was designed to run on 12V from the charge line from the tow vehicle while driving. I tried it once on propane and the flame went out and since that model was manual ignition, it obviously wouldn't relight.
With our travel trailer, we have a two way Dometic fridge with electronic ignition. It is designed to run on propane while under way. Absolutely no problem letting it run when you are driving.
As far as stopping for gas, I don't worry about it because I drive a diesel and fill up in the truck lanes. If I did pull up to a pump that also pumped gasoline, then I would turn it off just to be on the safe side.
