No need to jack up the truck, take off tires or anything else. Just do one side at a time. The pin on the bottom of the spring pack (or on top of the axle, not sure which) will hold the axle in place. The U bolts on the other side will keep the axle from rotating or shifting. It's not unsafe to crawl underneath since there is no chance of anything moving, as long as you only do one side at a time.
