Our actual tongue weight, fully loaded, in our rear kitchen TT nearly doubled from the factory dry TW and went from 10% to about 14.5% (with 4 empty tanks and 1 battery).
Doesn't matter if you have a front or rear kitchen or what the dry weight is listed at, you will never know until you have your TT fully loaded up for camping and go weigh it at a scale or use a tongue scale. You *might* be able to get an indication of what the actual TW might be by asking on a forum what others with the same model have found. I really don't think what you load into a kitchen area actually weighs that much , and it won't have much of an effect. As noted above, the manufacturer simply positions the axles to suit the type/layout of trailer.
I did detailed weighings of our TT last year, as delivered to the dealer, after adding modifications and then when fully loaded for camping. The weight of all cargo in our 29' TT fully loaded for camping (all interior stuff plus BBQ, chocks, etc. in pass-through) came to only 555 lbs (and that's distributed load from front to rear of TT). The weight of "ordinary" cargo isn't as much as some think unless you have a bunch of heavy tools, a gen., firewood, and the like.
