I would find another dealer as the service manager is full of it. DEF will age but it takes either 100 degree temperatures or exposure of storage tanks in full sun for it to deteriorate fast enough to be a concern. I get DEF at the pump so it is always fresh and the 5 gallons in the tank is burned in 3500 to 5000 miles so it does not get that old.
What has happened is that some of the NOx sensors and other sensors will fail and send messages to the truck's computer that indicate a problem with the DEF when the actual problem is with the sensor.
Lots of misinformation being spread about on the internet with regard to the new diesel engines and DEF but this is nothing new.
