The '13 Ram is a different animal as your truck utilizes urea to reduce EGR. Your mileage will be better than the MY '12 and older trucks.
Rick is right, I had overlooked the fact that you're looking for a truck that doesn't take DEF, if you're only looking at a 10 or 11...The trucks using DEF are getting better mpg.
You also stated you have an 05' 2500. I'm not familiar with the older Dodge trucks, but if that one has the 5.9, you'd also be jumping to the 6.7 Cummins diesel engine.
Also going to a 1 ton, as you stated a 3500, I'm figuring you're talking a SRW as opposed to a dually....I would think your mileage will drop over all going from an 05 2500 to a 2010 or 2011 3500....I was comparing 3500 Dually's (2010, 2012 and 2013), and apologize for having mis-read your post....
