On my '03 Ram I use Mother's protectant. Except for the last couple years its been outside all that time in every type of weather. Whole inside looks as good as when I bought it.
As for rubber mats, I use weathertech. They keep the carpet incredibly clean. My truck is used as a truck, on muddy industrial sites, wet camp grounds and of course those sunny days. The weathertech mats direct the water out the door, not onto the carpet.
To clean it, I pull the mats out and scrub them, a few minutes with the vacuum, wipe down the dash with the Mother's. By that time the mats are just about dry.
