I helped a friend do a similar thing to his closet. In our case, we left the shelves in place and simply made boxes that fit. This saved losing about an inch in width. It also is very convenient to just remove the box to get to all the contents or to pack and unpack. We learned the hard way that we should have installed a positive door latching mechanism.
