I'm thinking that of what you listed on your "wants" list, the biggest hurdle is going to be the part about comfortable seating for two.
Many folks find the dinette seating in the smaller trailers rather uncomfortable for an evening of sitting. In my case, ( funfinder 189FDS, just under 4000 pounds ready to roll )I have enough floor space when the slide is out to use a comfortable folding chair as my "easy chair". You might consider that when shopping: does the floorplan allow space for a couple of nice chairs ? It really comes down to how much time you are spending inside. I need something that I can spend extended periods of time inside in case of bad weather ( I go year 'round ), so you need to consider your own specific needs. If I had to spend extended periods sitting at the table, I would not like it. It sounds like Professor Dan has come up with a valuable upgrade to his seating to add comfort.
Comfort is such a personal thing, it's hard for any of us to make a good recommendation for someone else. It's like those "bag chairs" that folks use as a lawn chair, lots of folks think they are great, but I find them totally useless and horribly unsupportive.
Having fairly low tow vehicle limits really does place some restrictions that can end up being a deal breaker for lots of buyers.
