I understand the level of effort to raise and lower the day-night shades around the U-shaped dinette but I believe that they are vewied more favourably than mini blinds (we like much better) so the blackout curtains with tension rod would probably be a better solution especially if the OP decides to see the RV down the road.
That said the day-night shades on my RV are adjusted with the strings too tight and maybe backing off on the tension a bit would help make it easier to slide up and down.
