That's pretty much the plan. I just wanted to see if there is anything I should do to make sure the wiring is safe before I go to the trouble of sealing it all in behind panels.
Just make sure every wire is pretty much out of the way and up as far as possible. I'd also make that covering panel just inserted, not a fixed.
The correct way to do this is to vacate the unused receptacles and install either junction boxes or terminate upstream of the device locations. The OP's wiring knowledge and ability is below that threshold, I believe.
