Off grid and on road are two very different things.
Solar panels are one thing BUT you must have a battery bank to store the energy you want to collect. Good Batteries weigh a TON.
You might be able to swing it, but the price you pay for the extra equipment and hauling all that extra weigh for a few hours of comfort will be high.
BTW be very careful picking out an inverter. I purchased a 2000 watt inverter only to find it was "not the right type" if you wanted to use a microwave.
