We have been very happy so far with our Starcraft Launch 21FBS. One full season this year, plus part of last year with it so far. 8 feet wide and enough headroom for my 6'2" husband. No dinette, but slide-out sofa. Comes with a folding table that stores under the bed. We've only used the table once. Just haven't needed it, and that reinforces our idea that we didn't really need the dinette. Having the sofa is much more comfortable. It feels really quite roomy when the slide is out. We could even use it without putting the slide out if necessary. We found the smaller trailer (7 ft wide and no slide out) to be way too claustrophic. Nice bathroom area. Big (8 cu. ft.) refrigerator. It's a short queen bed, which is adequate, but we make it into full length by putting a 5" bolster at the head of the bed to make it longer for sleeping. You can buy them various places, but I made ours out of upholstery foam. I think the 2017 model might actually come with one. Of course it's a little heavier, but still very light -- ours is about 3900 pounds dry weight. I'm not really sure about all the other weight/math details and calculations, but this trailer met pretty much all of our criteria, which are pretty similar to yours. We've enjoyed it very much so far.
