Realistically you can sleep 8-10 in almost any bunk model. With 2 bunks, a queen bed, a fold down dinette, and a jacknife couch, with an air matress on the floor... that's a lot of sleeping room. Just depends on how comfortable you want to be, and how much hassle you want.
I second the motion to go to an RV show. I went to 2 of them, and 8 different large dealers to check things out. I walked through easily 350 different models over several months. I looked at as many or more online. One thing I learned... many many many units are nearly exactly the same with a different color scheme. It's hard to find something different, which is what I wanted. I eventually found it in the TT in my signature.
You'll be limited by tow capacity and payload after loading all those people in the TT. With all the gear 8 people will take, all in one vehicle and TT, you'll have at least 2k lbs in just people and cargo. I'd set a target of an unloaded weight of less than 5k lbs to give you some wiggle room.
