Either use Damp-Rid buckets (and put them in another plastic container just in case they spill -- calcium chloride can be caustic stuff), or get a compressor based dehumidifier. I have a Peltier based dehumidifer in my rig, and it is underwhelming to say the least, as it doesn't pull much water out.
