I think you will be OK. I had a set of ProComps on the burb for a while and they were great, I replaced them with Revos when they wore out.
Couple things:
1. Yes the ProComps have less capacity than the Michelins, but they still have plenty of margin considering the weights they are carrying. I don't see a concern here. Generally more capacity is better, but since you know your weights and they are way below the capacity of the new tires, you will be fine.
2. Biggest issue with a lift kit and taller tires is that the larger diameter tire reduces your effective rear axle ratio and kills towing power. In this case, the OEM tire has a diameter of 34.1" and you are going to a diameter of 34.6", so a nominal increase.
3. Tires with aggressive off road tread have thicker tread blocks that can "squirm" under load. I never had any issues with the ProComps on the burb towing 8500 lbs, you may or may not feel a difference. If you like the tires, try them they will likely be OK.
4. A 3" lift is not that big of a deal, it's not like a monster truck. Biggest challenge is going to be to re-adjust the WD hitch to be sure everything stays level while towing. If you can't get it adjusted properly, you may need to lift the trailer also, but would be surprised if you couldn't get it dialed in.
All in all I think you have made reasonable choices on your mods and should be OK towing the TT. Post up some pics!
