John if all you want is better fuel mileage and lower maintenance costs lets talk about those for a minute.
About the maintenance costs. Yes, it's plausible you will spend less on maintenance costs if you delete. The less "stuff" you have on any engine the less you will spend on that "stuff." If you delete your EGR you won't have to worry about that EGR failing. Same can be said for the DPF or SCR or whatever else one has on their engine.
As far as the mileage goes. If you just go with an EGR delete you might pick up a "slight" bit of mileage. Actually small amounts of EGR is good for mileage because it reduces pumping losses. Large amounts of EGR is bad because it contaminates the combustion chamber with mostly stuff that won't burn again. That's why when Ram went with large amounts of EGR and no SCR they lost their mileage dominance in the mileage market to GM and Ford.
If you went with a full on tune box and drove your truck the same way you drove it before you would pick up quite a bit of mileage because of the timing change. More timing in a diesel means a better more efficient burn and that is where the mileage comes from.
The problem is, the high timing comes at a cost. In one word, NOX. That is why the cars in the 70's were retro'ed with smog kits. Remember those? The smog tech would put a BB in the vacuum advance line and knock the timing back about 10 degrees and richen the carb up. All of those things would bring the NOX down................but it would also cause one to loose a bunch of mileage and a HUGE amount of HP for those 60's and 70's cars.
So yes, to answer your question. You will pick up a bit of both but at the expense of a lot of smog.
So it's up to you to pick what "you" want to do; I'm just telling you the facts. Happy RV'ing! :)
