Layouts I've looked at that feature a dinette/couch slide all have other big drawbacks like no outside kitchen or only single size bunks. On the other hand are some really nice shorter TT's that have some great features, but don't have the sofa which is pretty much the only con I can see.
I plan on checking some out in person, but would love to hear from people and opinions about the sofa.

I wouldn't own a travel trailer without a sofa. As far as outside kitchens, pretty useless IMO. I don't want my kitchen on the camper side. I use a screen house and setup a kitchen inside with my grill, stove, and cook table. That along with all my spices and such.
Had a camp kitchen on the Pop Up camper side and found this was cramped and in the way of other things. Plus the built in outdoor kitchens waste so much space when you can setup a mobile kitchen away from the camper or use the indoor refrigerator which is much better.
Each to their own, but I say scrap outdoor kitchen and make sure you get a sofa.
BTW, make sure you get a real sofa and not a goucho pictured above by the bunk beds. A goucho is nothing but a larger dinette seat or bench with a back. Very very uncomfortable. My sofa in my Jay Flight is very comfortable and more comfortable than many home sofas.
