Toad Campers

I looked at the Jayco tent campers, and for what I need I could easily travel with a Jay Series Sport, Floorplan 8. It is really basic, but has exactly what I need when traveling or camping: bed(s), camp stove and dinette table that can be carried outdoors if desired, an ice chest, and I'm sure I could find storage space for a porta potty. I forget the center height, but think I'd be ok with it. I have had problem in a tent getting up off an air mattress in the middle of the night and losing my balance, and you can't really steady yourself on a tent wall.

Any thoughts about how easy or difficult it would be for one 72 yr old woman to set up/take down a tent camper?
