Agree. My old truck was a 2004 Chevy 2500HD with 6.0L, 4L80E tranny, and 4.10 gears. It towed my 7500# TT fine, but when I got in the hills of east Tennessee it would hold about 4200RPM on the inclines. It certainly got there every time, but it got old listening to the roar.
I don't think I would wanted to pull 10,000# with the truck. On flat or rolling hills it would have been okay but not in mountainous areas.
The 'Burb years you mention with 8.1L engines will have the 4L85E tranny. I would look for one with 4.10 gears if you can find it. 3.73 shouldn't be a deal breaker, but 4.10's will give you better low end grunt.
V10 Excursion is also an excellent idea.
