Yes - you're getting it. The 2,000-2,100 number I gave you was the payload, which is what is left after taking the curb weight of the vehicle away from the GVWR of 8,600 you listed. The only way to know EXACTLY what your payload is would be to take the truck to the scales and weight it, then subtract from the 8,600. The result will be somewhere in that 2k range.
As for the hitch, you are correct. There were known hitch issues in that generation of Suburbans, so many people suggest swapping them out anyway. What the hitch can handle is solely a question of the hitch and has no impact on the capacities of the vehicle. You can get quality hitches that you can install yourself that would handle any load the truck could handle (Our hitch has a 1,500/15,000 rating).
