Basically, the M is manual mode. It allows you to manually shift through the gears by pushing the + or - buttons. The number next to the M is the gear you are currently in.
With that, I would say use M when in mountainous regions and shift gears like you would with a manual transmission to keep the auto transmission from switching gears constantly.
