Install a PacBrake and you a are good to go!
Seriously, you towed much with the 7.3 F250 with 12K hooked up . You can install all the PacBrakes in the world, won't change anything but a bit better on the downgrades, but first you have to get to the top to go down the other side.
Good advice on the PacBrake, but totally bad advice on the good to go. There is nothing good to go towing 12K with a 7.3 .
Look at my Signature! I tow an easy 11,000# with a Cummins 5.9 with a 50 hp, 150 lb. ft. chip, I also live in the PNW and pull hills at posted speeds with a 3.55 rear gear!
I did look at your signature. :h Let me see if I get this, you are comparing a 5.9 cummins to a 7.3 :@ And somehow you say he is good to go ?? I will ask again, how much have you towed with a F250 7.3 Superduty WITH 12K hooked up.
Well 1.4 L more displacement, the same stock HP and a bit more torque than my 2001 5.9. I also have 3.55 the OP has 3.73's. He has a small tuner, I have a small chip.
So, on the freeway I seldom come out of OD, once doing 65+ the engine is in its sweet zone zone and will pull most hills at speed.
The 7.3, is a good engine, yea your 2014 has many more HP, but moving 12,000# down the road, uphills and down hills is not an issue, for my Cummins OR a 7.3 Cornbinder PowerStroke!
The OPs biggest issue will be slowing coming down hill, hence a PacBrake.
