My wife though insists that we need a spare bedroom for the kids so that we can put them to be before us and not wake them up. The problem with the spare bedroom is that it really limits you on living space. I don't care a whole lot about bedrooms because you just sleep in them. The rest of the time they are unused space.
Maybe we can wait it out long enough until the kids are no longer infants/toddlers. In reality that is a short period of time. I would think that once the kids are 3 or older then putting them to sleep on a couch should be okay I would think.

I agree with your wife. Getting older doesn't really change the equation. Giving kids there own dedicated space allows the adults to have their own space. A bunk room allows for more than just sleeping.
Kids can play games or just hang out in their own area. I am firmly in the kids require a bunk house category. Making up beds and converting rooms gets old in a hurry. A bunk room also give kids a place to put their stuff. Clothes and gear will have its own space as well vs. being everywhere and anywhere. Look at the lounge floor plans. Where do you envision the kids putting their stuff? Besides over there in the corner...LOL
