OP is on the right track....not that you would go camping with the slide in, but there are plenty of times when you can't extend it....stopping at Cabela's or Wal-Mart or Cracker Barrel, let's say you want a sweater from the bedroom or maybe to lay down for a few minutes. No room for open slides in interstate rest areas either.
Here is our floorplan (ours is a 2008, we also have the garden bath in the rear instead of the bunks)

The slide does block one cabinet when it's in, so we use it for storage of stuff we are not likely to need on the road. The bathroom, kitchen and bedroom are all fully usable with the slide in.
We also got the queen size pull out bed instead of the jacknife sofa. But look at the floor plan....with the couch opened up, the end of the hide a bed comes right to the edge of the counter so there is no way to get from the master bedroom to the bathroom with the couch opened up!!
Easy fix for us was to switch locations of the free standing table/chairs and the hide a bed, so now the open bed doesn't kine up with the jog in the countertop and you can walk around it when it's open.
OP, since you have a handle on exactly what you are looking for and your weight limits, you may want to shop used also...floorplans come/go/change every year in the RV biz, so you may find a TT in great shape that's a a couple years old and is exactly what you are looking for.
