My understanding is that a fridge in a slide requires at least one powered fan for operation. We do extended camping in national forests and parks with no hookups, and sometimes in areas where generators are not allowed. We prefer not to have the power suck of a fan.

You're correct . What I don't know is , how much of a draw it is. Swap fans for one's with less amp draw.
Also you might hear fan noise being so close to the bed (the non dangling full queen bed :C )
If you find a floorplan that you really think will work and the only negative is the vent fan, then maybe a solar panel can make up what 12v power the fan uses. ( maybe, just a thought)
While boondocking, you can also install toggle switches to kill all 12v draws like the radio/tv draw etc (use them as needed, no need to leave them on all night). Also, there is one model of ceiling exhaust fans that has a draw when it's OFF. So, that's worth checking into too. You would have to put an amp meter on the TT to test each individual trailer to resolve things.
You could also use portable detectors as well to off-set the fridge fan draw.
