My 2002 Suburban (8.1L and 4L80E) goes in to "limp mode" at I believe 250 degrees in order to protect the transmission. It's never happened to me, including pulling up Wolf Creek Pass last summer. I stopped and let it cool for a while since it was up around 230+. Generally runs around 190 on flat roads.
I'd imagine many newer trucks have a similar feature.
