I've towed cross country trips 3 times with an Ecoboost F150 (payload 1800) pulling a scaled weight of 6500 pounds (25'). Family of 4. It was a very nice combination. Whether I was or not, I always felt like I could be the first to the top of the hill if I chose. Very much stress free.
Although the engine was more than capable, there was very little transmission braking, and it did have me on edge for the longest/steepest descents.
There is also more to payload than the max number. You have axle weights to deal with. When I got on the scale, I found I was 100 pounds over on my rear axle.
If you go with the EX, it will likely seem fine, but just on the edge of weight limits. The engine far out does the chassis.
Another consideration is a crew cab truck with camper top. If it's only ever 2 of you, it's the better option. Everything you want in the EX without the extra seats that you may not use anyway.
