Looks like he has a F150 of a similar year to the one I used to own. The truck keeps track of mileage by trailer and you can program it to recognize several trailers through the user interface. As soon as you plug in a 7-pin (it's unaffected by the 4 pin), it automatically starts tracking mileage for the last selected trailer. OP is stating that it's doing this with no trailer actually attached. It can be manually selected to "No trailer", but it shouldn't need to be.
In my opinion, OP has a short somewhere in the truck wiring to the 7 pin or is having a software issue. I'd start by checking the pins on the truck with a multi-meter or using a 7 pin plug-in tester if available and seeing if something's going to ground.
