For the same reason you can't play basketball like you did when you were a teanager.

Now you may be right that wear and tear may be insignificant.
But my thought is parts wear,wire corrode,glow plugs aren't quite a bright,motors don't spin quite as fast or as easily as when they were brand new.
Essentially as things wear, resistance is created. We could be talking about my aching knee, the flywheel in my truck or wiring in my starter.
This resistance be it mechanical or electrical puts more drag/strain on the battery. Much in the same way are old joints and clogged arteries put more strain on our heart...wear and tear.
For instance I never had a problem starting my prior 2007 Duramax with 300K on the clock nevertheless It did not start quite as smoothly and effortlessly as my 2019 Duramax with 5K on the clock.
Actually, a well worn eng turns over a lot more easily than a new one. Your Diesel may have to turn over more times when the injectors and HP pump aren't operating at peak efficiency anymore though.
You can also check it with an inductive ammeter and see that the starter doesn't pulls anymore amperage (an indicator of work) when the engine has a lot of miles on it than it did when new.
Mine starts faster than new with a set of newer generation injectors in it. It typically fires on the third cyl to come up.
BTW, there's a world of difference between your two Duramaxes - can't realy compare them in reagards to how they start.
I hear you as far as comparing the two motors. But your not going to convince me my 300K motor is just as efficient a a brand new LBZ motor either.
The starter,glow plugs,wiring,connections have all degraded to some degree. All of this will cause the motor to put a little more stress on the battery vs. a brand new motor, with brand new glow plugs, connectors,injectors etc..
