We made the transition from a PUP to a TT a few years ago and I will never go back. We opted for a bunk house model for our kids aged 7 and 11. If I could change one thing, I'd buy a model with a slide but we still love the TT.
Set up and take down is fairly simple after you have done it a few times. My DW knows what to do now and the both of us can set up in about 15-20 minutes if we are at a water/electric site. Loading is much easier since you can stand up in the TT and most models have pass-thru front storage and rear storage. We can also throw junk on the beds and unpack at the CG if needed.
I do feel a bit cramped in our bedroom, especially when changing but it's a place to lay my head, not hang out. We have a 16' awning and I prefer to sit under it and not in the camper all the time. You can buy screen kits for the awning if you want protection from the bugs.
Go to a dealer and walk in some campers with your kids and get a feel for the space...you cannot get that realization by looking at floor plans on the web. In our TT, the tight spot is between the kitchen and dinette. You can get a descent non-slider for under 15k if you are on a budget.
