The thermocouple will shut down the gas on the odd event the flame goes out, and there is no additional fire risk that I can think of.

This post reminds me so much of the classic movie The Long, Long Trailer...
I would highly recommend that you rent or buy the movie and watch it very closely!
Honestly unless you are trying to bake something dry (Pizza,bread, muffins) I would think you will end up with a complete sloppy mess not only in the oven but on the floor!
Anything with liquid is going to slosh around and the dish you would need to use will need to have a lot of height to prevent the liquids from escaping as it gets bounced around..
I really can't think of any real good reason as to why you simply can not wait until you park for the evening to cook something.
Better yet, if your issue is on the road meals then perhaps you could PREPARE some meals and freeze them BEFORE LEAVING on your trip (you can even portion them out according to the amount of people you need to feed). Then you simply pull over at rest stops, pull out of the freezer and microwave.. No gen, no problem, you can pop the frozen food out of the container and reheat it in a pan on the stove top..
We prepare a few meals (sloppy Joe, precooked burgers done on charcoal, chicken and so on) at home and freeze them if needed, I carry my gen in my truck bed and simply run a short extension cord to the trailer, works great and less complaints about cold cut sandwiches anymore!
Another way to prepare food on the way is some folks use a small crockpot set in the sink with an inverter. The sink keeps the crockpot in place and if any spills happen it will stay in the sink.. Many good foods can be made in a crockpot and on high setting can be ready to eat in 4 hrs or less!
I am not a big fan of the idea of running an oven unattended, just way too many endless possibilities of something going wrong..
