FWIW, for many of these RV sized ovens, a full-sized steel cookie sheet can be bent up on each side and can be fitted to ride in the oven's rack channels. I had just such a sheet for baking biscuits but it's gone missing, probably stolen by Emeril Lagasse. Bam!
My rig rides rock solid, I've even left a cup of water on the countertop and after 100 mi. it was still intact and hadn't splashed. I don't know that I'd chance a beef stew in a pot, cooking, while underway. There is just too much risk for the small reward. Baking bread just before you pull into a CG is probably going to get you some upturned noses, lol.
