That's the purpose of a thermocouple. If your pilot light still vents without a flame then you have a failed, and unsafe, thermocouple.
X3. You have a unsafe oven. You need to get it fixed ASAP... If it can vent propane with the pilot out, then it is not safe to even turn the propane tanks on... It can leak gas inside and end up killing you.
X4 on the thermocouple as a residential gas HVAC service tech, I can tell you the basic thermocouple safety design has been used for about 100 years and is normally very reliable, it's designed to fail off, if your oven is leaking gas when the pilot is off for more than approximately a minute, you have a serious problem and need to get it fixed.
