I have towed both TT's and 5th wheels. Both have their advantages and disadvantages. Both need to be properly set-up for towing and have the proper tow vehicle (meaning "payload") for the trailer its pulling. As far as one being more stable pulling or in crosswinds I feel a TT is no less stable (when set-up properly) as its height is usually 4 to 6 feet lower. If your in a major crosswind situation you don't want to be travelling anyway. Also most TT's weigh less therefor better gas mileage. Backing up a TT VS a 5er does require a different method. Also you can get smaller TT's.
