The best way to beat the heat is to camp where it's cool, in the mountains, above 6,500 ft.
We do have an A/C but we only use it while we load up the camper, otherwise, it would be over 120 degrees inside without it.
For the Wolf Creek 850s, get a roll of the silver roll insulation and cover up the bubble skylight in the bathroom, that will make a huge difference in the summer sun. If you didn't already, put a Fantastic Vent fan in the bedroom. Having that air flow inside will make a big difference as well. I would also pick up Fantastic Vent's portable 12v fan for directional air flow when needed.
