I should also note, that you say you are not a "gambler".. Over the years I have found that trying to buy a vehicle off the lots is more gambling than you think..
I bought two trucks off the lot, dealer did a three state search of all the Ford dealers.. Both cases they found a truck which met MOST but not ALL of my requirements.. I had to compromise.
Starting with our third truck, the dealer was not able to find ANY which even met the bare requirements that we where looking for..
That is why we started ordering.
One thing I have noticed with the trucks on the dealer lots.. They ARE just loaded with "options" which often drive the vehicle way over the top in cost. That is why we ask the dealer to do an inventory search of other dealers FIRST.. In most cases the dealer found vehicles which cost less since they are not loaded with options. If they cannot find what we want then we ORDER.
Ordering allows us to pick and choose the options we want with very little if any compromise..
The result is a truck the is decently priced well below anything I can find on a dealer lot and when it is delivered it IS the way we want it.
As far as one getting "damaged", has flaws or doesn't drive right from ordering.. I am not sure how you came to the conclusion that ordering one is going to result with you being stuck with a bad one..
Dealer does delivery prep on ordered vehicles just the same as one they they fill their lots with.. Most flaws or damage will be discovered during the dealer prep.
You have the right to refuse delivery of a ordered vehicle that has severe flaws or damage but if you do the dealer has the right to keep your down payment (you may have to give up the down payment)or dealer may allow you reorder and use the existing down payment for the new order..
As to getting one that doesn't drive right.. You have the same chance of getting a lemon of the dealer lot so really that is not a good argument.. Dealer is under the same obligation to repair any driving and or cosmetic issues under warranty and often will be able to make it right.
Yes, ordering can be a bit scary but overall it is no more painful than trying to buy off the lot.
Order what you want, the way you want instead of compromising with aftermarket add on towing mirrors.. There is no substitute for the OEM factory towing mirrors.
