Our trailer is 26' in length and 5600 lbs loaded. It has double over double bunks in the rear, no slides, dinette across from the kitchen and a huge U-shaped dinette in the front that we leave permanently made into a Queen sized bed. It is very cozy for us and our 3 kids. None of the kids want to sleep together anymore and our 6 year old started sleeping in the cabinet over our bed in front that folds down into a small bunk bed this last summer. We've had it since 2008 and will probably get a triple bunk in a few years and a slide. We really like the Wildwood 26TBSS. We spend most of our time outside, but when the rainy days come, it would be nice to have more room. I definitely don't want a trailer bigger than 29' which the 26TBSS almost is. I like the length of the one we have and wish I could get what I want in that length but it is seemingly impossible. Most of the ones I like are 32-33' but I'm not going that large. We like back woods campgrounds at times and 29' will be pushing it. 33' would be no problem at most campgrounds around us, but we never know where we'll end up and sometimes it will be a problem.
If you're buying the bigger trailer to have room for kids because you don't want to buy again in a few years, definitely get bunks. If you're not going to get bunks you might as well start with a smaller trailer because you'll be wanting bunks in a few years anyway.
