Living in earthquake country, we have always left our fresh water tank full and a stock of food in the trailer for use after California falls off the edge. The trailer lived next to our house so it was our lifeboat. Never suffered any bad effect when we took this water with on a trip. We did the usual Memorial Day, Fourth of July, Labor Day, Thanksgiving long weekends and maybe a week long vacation trip a year. so the water sat a while A three day weekend involved 170 miles each way, so hauling 50 gallons of our own water worked out. Now that we are retiring, and the new trailer is larger, it goes to a storage yard between trips. No value in leaving water aboard now. We will head to the desert this winter with 50 gallons in the tank and 5X5 gallon jerry cans for boon docking. Won't be hauling this over the mountains, but will fill all just before leaving civilization.
