I actually just got back from the Bay of Fundy last weekend! I have family out there. It's gorgeous. I'm hoping to take my trailer out to Prince Edward Island at some point.
I've heard there's a place in Pennsylvania that you can go camping at where you can't have any fires or any lights that aren't red lights - so that you can see the stars better without any light pollution. I've been to Pennsylvania several times for vacation but never for camping. I'd love to go to a star-viewing park though.
If you want to go to a Provincial Park I highly suggest that you go to
Algonquin Park. You have to book your sites through
Ontario Parks. Along the highway corridor (meaning you can access it by car and they're not canoe access only) there are six sites: Tea Lake, Canisbay Lake, Mew Lake, Lake of Two Rivers, Pog and Kearney Lake, and Rock and Coon Lake.
Here's a map. Your pass will allow you to visit any of the parks while you're there, but you have to sleep at the site that you've booked. Whenever we go we check out the beaches and trails all along the highway corridor. Algonquin is where you'll see tons of moose and the canoeing and hiking trails are out of this world.
